Hello All!
I came across another method for crashing the boiled potatoes. It is simply to cover them with plastic wrap and squash with the heel of the hand. I tried them the other week when someone was questioning how to mash/smash them without sticking My Crash potatoes were crispy and I used the same herbs and potatoes I did for oven roasted. I'm talking about the oven roasted red potatoes that are cut in quarters, marinated in a mixture of olive oil, crushed garlic, freshly ground coarse pepper, freshly picked and chopped thyme and rosemary. Spread on a pan, sprinkle with Kosher salt and roast at 450F until the cut surfaces are evenly brown and crispy and slightly puffed. Maybe it is my preference. Oven roasted seems like less work. I was very positive that I would like the Crash potatoes and then was disappointed. Janet |
