Anyone have a tried and true bread machine recipe with cheese? I've tried
several with garlic powder and grated parmesan. Ok, but too little flavor of garlic and cheese for my taste. I've not tried any with shredded cheese like cheddar. I have a couple I DLed but I've too often been disappointed with DLed recipes. I'd prefer one that someone tried and enjoyed. They changed owners and the new owners ceased the production of the cheese bread so i looked up a number of recipes. I have never used a bread machine so i cant answer that part of your question but from what i have read either the cheeses (depending on type) ae grated or cubed and mixed into the dough then baked. The loaf i used to get had a big layer of cheese in the middle. Which i think must have been placed in a "pocket" of the dough, the dough formed into the loaf shape and sliced open, the cheese inserted and then closed and baked. I have used basic the basic french bread recipe and rolled up thick slices of cheddar cheese, crushed garlic and oregano into the loaves then baked. Works well and is especially nice when sliced and toasted and buttered. Due to the tendency of the cheese to melt toast slices flat in an "toaster oven" or under the broiler. Forget the powder and roast a head of garlic. Parm works but mozzarella is better (IMO) Use both. Use the dough cycle on your machine and bake it in the oven. I make the dough and roll it into a rectangle and spread the garlic and a big handful of cheese over it and roll up like a jelly roll. Fold the sides over and use a loaf pan or just bake it freehand. You can also spread pesto and chopped up sundried tomatoes over it before you roll. You can add more flavor by using a tablespoon of sundried tomato oil in place of a tablespoon of the water. Once you figure how much cheese and other fillings your bread recipe will handle you'll be set to experiment. I've tried baking in the machine with the cheese mixed in the dough rather than rolled in and I didn't like it as much. Lou |
