Holsteins are milk cows, not beef cows.

Make a note: all bovines can be beef cows if they are bulls and the
farmer/rancher/dairyman has too many bulls, he cows for the unastute.
They castrate the calf at ten days of age, feed it good on corn and it
turns into, wait for it, here it comes, A FRICKING BEEF COW, otherwise
known as a beef critter or, actually, a steer.

In addition, cow critters, aka female bovines, are butchered as canners
and cutters when they are too old to breed and "come fresh" again, ie
make milk to feed the calf. They are then made into hamburger, sausage,
and stew meat.

My partner and I are fattening up a, to use the polite term, neutered
male bovine, and will have him butchered when he hits the right weight
and body conformation.

An aside to the regulars: where do all the idiots that post on this
newsgroup come from?

Why wouldn't the idiot who wrote the original urban legend use a Hereford or
an Angus?

Town. Meat comes wrapped in butcher paper or on a styrofoam tray.
Most of us prefer it that way.
