In Wisconsin during my college days there was a bar that gave away a free
"Cannibal Sandwich" every Saturday morning if you bought a Bloody Mary. Raw
ground beef on rye, topped with a raw egg, onions and capers.

Now, the health department would probably shut him down.

If all the things that they say are bad for us were REALLY bad for us, we
would have been dead long ago.

Today I am thawing out a 5 pound chub of 80/20 ground chuck and I'll make
meatloaf for tonight and meatballs for the freezer. As I have done all my
life, I'll taste some of the raw mixtures before cooking. If it kills me,
it will be the first time.

You can still do that if you grind up a round steak. :-)

I'll still use ground mystery beef sometimes where it gets cooked well
done, or sometimes I'll use a package out of the freezer that I ground
myself last time I found brisket or chuck on sale real cheap.

If I want a medium-rare burger, I grind it. But I find myself eating
a lot less meat lately, and more beans and cheese.

I went to UW-Oshkosh in the early 70's but I lived in Appleton and the bar
was up the street from me there.

I moved away from WI in 1978 but I still miss the brats and cheese curds.

Boy, what I caught of the program is truly disgusting. It also
called into question (at the very least) the practice of buying

According to this program, the standards for steaks etc. are lower
than those for ground meat, because it is thought that the steaks
will be cooked to a degree that kills off pathogens....

I don't know. Maybe all of the above. Cost is probably the biggest
one; I'm trying to fully-fund my 401(k) and my Roth IRA and a health
spending account while sending a kid to college. There's not much
left for food and gasoline after that -- of course I don't *have* to
fully fund all the accounts. But also Daughter is dabbling with being
a vegetarian, so while she was home for summer I cooked a lot of
vegetarian meals, and they weren't bad :-)

I think vegetarianism is a bit extreme, but most Americans probably
eat too much meat. At least DD is still eating eggs and dairy.

We get these chubs of "Mystery Meat"
directrly from the processor.
( apparenbtly chub packaging extends the shelf life )

It has no taste, no smell.... might as well be kangaroo.

You can still buy local ground chuck...at more than double the price.

Personally, I still think it's a government conspiracy
to move people away from beef, and into
more pork and chicken.
Who can afford beef any more ??

I heard it mentioned that steaks only get contaminated on the outside
surfaces and grilling steaks kills that off but, if you grind that same
piece of meat, you are potentially folding any outside contamination into
the grind.

Janet,

That's what I heard.

As populations explode the world over, the agricultural knee-jerk reaction
is to faster supply beef (and all other consumables) to meet the larger
growing demand at any cost. It's a snowballing downward spiral, imho.

LOL! And I actually eat very little ground meat. This program is

I have read the recent article in the NYT about ground beef. Since you
questioned the practice of grinding meat for oneself, I thought you would be
able to tell me why that is a problem. I won't be listening to the program.

Well, I woke up this morning... still alive. The meatloaf was delicious and
the meatballs are in the freezer. Both mixtures tasted pretty good raw.

Once again I have tip-toed past the Grim Reaper and lived to tell about it.

Tonight we are going out for dinner and I plan to have crab legs and very
rare Prime Rib. If anyone thinks that either of these things are
potentially fatal for me, please keep it to yourself. <vbg>

I have never spoken of this... but I often trim the fat off so I can
have it all to myself at some later point in time :-), and yes, I like
it charred on the outside.

I think the article is related. I did speak of the problem with
grinding your own meat. The meat sold for steaks etc. apparently
has lower standards as far as pathogens go, on the theory that
they will be killed by thorough cooking. Thus, you could very
well be grinding surface bacteria etc. into your meat. That being
said, since I don't think we are all going to give up totally on
ground meat, it is up to us to decide what the most acceptable
approach(es) might be.
