From _Joy of Cooking_
Baked Hominy 1 tbs veg oil 1 C chopped onions 1 C chopped baked ham or apples (I used ham) Cook in frying pan until onions are soft Stir in: 2 1/2 C hominy (drained caned or thawed frozen) (I used a can of white) 1 14 1/2 oz can of diced tomatoes with juice 1/2 tsp salt 1/8 tsp ground black pepper In separate bowl mix 1 C fine fresh bread crumbs and 1 C grated cheddar cheese (I used shredded) In greased casserole dish put one half of hominy mixture. Sprinkle on 1/2 bread crumb mixture, then remainder of hominy and top with remainder of bread crumbs. Dot top with 1 tbs butter. In preheated 375 degree oven bake uncovered until browned on top, about 15 minutes. Good! -- "When you choose the lesser of two evils, always remember that it is still an evil." - Max Lerner |
