Default Caramel Apple Walnut Pie

Obsconded with from today's Philly Inquirer (food section on Thursdays here)

8 tbsp butter, divided
3 tbsp lemon juice
3/4 cup sugar
1/2 tsp ground cinnamon
6 cups thinly-sliced apples
2 tbsp cornstarch
2 tsp vanilla extract
12 caramel candies
1 unbaked pie crust
1/2 cup chopped walnuts
1/4 cup flour
1/3 cup brown sugar

1. Melt 4 Tabls of butter. Add the lemon juice, sugar and cinnamon. Add the
apples and cook til soft.
2. Remove from heat and let cool. Stir in corn starch, vanilla and caramels.
3. Place crust into a 9 inch pan. Mound the apple caramel mixture inot the
crust.
4. Melt the remaining butter. Mix in flour, brown sugar and walnuts.
5. Top pie with mixture and bake for 50-60 minutes until golden brown.
Cool for 1 hour before slicing.

Per serving: 422 calories, 4 grams protein, 69 grams carb., 28 grams sugar,
16 grams of fat, no cholesterol, 248 milligrams of sodium, 4 grams of
dietary fiber.

Ha! I was just looking at that at my desk and thinking 'why didn't I think
of that?'. The pie contest, I mean.
