Default Thanksgiving cooking in advance

We are eating Thanksgiving dinner tomorrow (Wednesday). Today I have
baked:

brownies for my husband's birthday
pumpkin pie
cornbread for dressing
sweet potatoes for casserole

I may chop onions and celery tonight. Sometimes I saute the onions
and celery the day before Thanksgiving, too. It makes the house
smell so good and gets me in a cooking mood.

Has anyone else started cooking?

I made the cranberry sauce and cranberry salad. DH cut up the bread
and toasted it. Tomorrow I will dig the giblets out of the turkey and
start cooking them. The rest gets done Thursday.

Not today Josephine. Today I cleaned the top of the gas stove, had to,
had to remove the vent fan and all of it's assorted parts in order to
really do a good job of degreasing, degunking the thing. Then I put it
back together again with a new filter, etc.

Tomorrow I will make cornbread for Thursday's dressing, wife will make
her well-liked lemon meringue pies, and I will probably make a Texas top
pear mincemeat pie that I like. Recipe for that one is one that daughter
invented when she was about twelve for her 4H club. Always made with
homemade pear mincemeat.

The menu is engraved in stone, invitations have been issued by
telephonic communications, dining table now seats eight instead of two,
linens are ironed, floors swept and mopped, getting ready for it all.

Heavens yes! Tonight I made the brownies, DH will make the pies
tomorrow, I'm cutting up the veggies to roast tonight (since after the
root canal tomorrow, I don't know if I'll feel up to it!), and the
dressing will be prepped tonight other than mixing the liquids in so
it can just go in the dish and bake Thursday. just bought the fresh
bird today (the other one is in the freezer all cooked, sliced and
portioned for our meals through the winter) the soup from the bones in
jarred and in the back of the fridge, waiting to be heated and have
the carrots and dumplings added. Friends are bringing a salad, and my
college kid will spend part of tomorrow chained to the house helping
get the place in shape.

If it weren't for the root canal, I'd do it all on Thursday.

Feet killing you yet? Sounds like you've lived in the kitchen most of
the day. I admire you ppl who tackle the big day.

Not yet. I'm working tomorrow so tomorrow night will be for prep work on
some of my contributions, and I can make the spreads and stuff the celery
ahead of time. My two green bean dishes just require blanching the beans to
prepare first the casserole and then wrap the rest of the beans with bacon
to be cooked on Thursday.

While it does make for a lot, I prefer to do 99% of it the day of TG.
The only thing I do ahead of time is cube up the bread to sit out on
Wednesday night and get stale, in advance of making the stuffing early
Thursday morning. I don't like pies made in advance as I feel the
crusts get soggy. I like the peace of getting up before dawn and
starting my pies, then prepping the bird and moving on from there. The
veggies get prepped and are ready for cooking by late morning and I can
actually kick back and relax a while. I have this meal down to a
science, and can knock it out for 20 with my eyes closed. Once you do it
a few times, it can almost be done in my sleep.

Cooking? Mmmm, not so much. I've started preparing what I'll be
bringing to our daughter's home, though. :-0)

Margaret will be so proud, if I tell her, that I de-strung (de-stringed?
stringed? strung?) the celery sticks. Peeled the celery? If you don't
do that, you can have built in dental floss. :-0) Versatile celery.

I made cranberry sauce last night--I guess that's cooking. Carrot cuts
are cut for the relish tray. Pickles are ready. Olives (green and
black) are ready. Pickles (two kinds) are ready. Veggie dip is ready.

Red cabbage was made on Saturday, I think; I didn't make it.

I'll cook the wild rice tomorrow morning.

I am the same way. I have been preparing Thanksgiving for my family for
the past 15 years or so. I do almost everything on Thursday, except the
cheesecake and maybe a dip. We usually have around 20 people too.

This is the first year in a long time that I am not hosting
Thanksgiving. I am looking forward to being a guest for a change.

I will be baking a ham Wednesday for it to chill overnight for easy
slicing Thursday. That is my contribution for the feast at my sister-
in-law's house. She also requested rolls and I'm bringing the brown
'n serve variety from the grocery store. I'm also going to spring a
crescent dinner roll 'cake' on them.

Rotten timing. I hope the root canal goes well and doesn't
interfere with your enjoyment of Thanksgiving.
