Caught the Thanksgiving feast episode from Jaques and Julia Cook at
Home, and decided to prepare my turkey that way. I ordered the DVD set and the book - the DVD's have arrived, but the book has not! ![]() In the program they give the cooking temp, but never the time. They don't give a name in the DVD, but it sounds like "Deconstructed Turkey". (You remove the thigh quarter and back, and roast the breast on a mound of stuffing with the thighs lying in the roasting pan.) It's not really all that much effort to deconstruct.
