Default 1/2 of a promised recipe...

I've been a bad girl.

A while back a few were discussing the famed writer/vet James
Harriot. Well.... longer explanation shortened - I said that I
used to make Potted Beef using a semi-recipe from one of
Harriot's books... I still need to dig out the book so that I can
give the directions as to how to make it *BUT* I can give an
ingredients list in the meantime:

Potted Beef Spread
(Based upon a semi-recipe from "The Best of James Harriot" by
James Harriot; page 260)

1 # Stewing Beef
1 tsp Salt
5 TBSP + 1 tsp Water
Butter
Seasonings:
Celery Seed
Allspice
Thyme
Chinese 5-Spice Powder
Fresh Parsley

Wayne, dearest, 1000 apologies for taking so long! Arrgghh! Can
I use the excuse that I caught the same cold twice and my 4 y/o
wears me out?! LOL

Here is the long awaited recipe for Potted Beef (please note the
correction for the amount of water):


Potted Beef Spread
(Based upon a semi-recipe from "The Best of James Harriot" by
James Harriot; page 260)

1 # Stewing Beef
1 tsp Salt
6 TBSP Water
Butter
Seasonings:
Celery Seed
Allspice
Thyme
Chinese 5-Spice Powder
Fresh Parsley

To make potted beef, cut up 1 pound of stewing beef into small
pieces and put it in a stoneware or glass jar with the teaspoon
of salt and the 6 TBSP of water.

Cover the jar with foil and stand it in a pan of hot water. Boil
for 2 1/2 hours, topping up the pan with hot water from time to
time, then turn out the bneef, season it liberally and mince it
finely or pound it to a paste. Press it into small pots and seal
them with a thin covering of melted butter.


Preceding the recipe, James makes the following comment:

"POTTED BEEF - An economical spread for bread and butter at
teatime was made from a cheap cut of beef. At the teas in the
local chapel which followed the anniversary service or the Sunday
School procession at Whitsuntide, there would always be
sandwiches or teacakes filled with this savoury paste..."

I'm thinking I need to make up a couple batches of this to give
to neighbors as early Christmas goodies, over the next couple of
weeks...

Cyndi,

No need to apologize... We have busy lives and being sick and taking
care of a 4 year old certainly doesn't help with your schedule or free
time. Hope you are much better by now!

I'm delighted to have this! At the time of our first exchange about
this, I did a bit of googling and found a fair number of recipes.
However, absolutely none of the ones I found are seasoned quite the way
this one is. This really sounds delicious.

I already have all the ingredients, so will be making this next Saturday
as a dry run. I plan to serve this as one of the appetizers at both
Thanksgiving and Christmas. Can't wait to tastte it!

Awwwwwwwwwwwww, you're so darn cute! <giggle>

Thank you. Yep, feeling much better; however, DH now has the
nasty bug. Arrgghh! He's on the road to recovery but now has a
definite understanding about how nasty I had felt.

After our initial talk of this and then once I finally got off my
duff and posted it - well, I too, will be making it for friends
and family. My thoughts are to make it the weekend after
Thanksgiving and give out as early food gifts. In our
neighborhood, several of the neighbors like to deliver goodies on
Christmas eve... Well, knowing how many goodies are passed
around - my thoughts were to do this early before everyone gets
hit with more food than they can eat. I dunno. It sounded like
a good idea in my head... ? Some of the voices can be very
persuasive. LOL

I'll be making some mini loaves of bread to go with them.

If I had fewer friends/family and a bigger budget... I got the
coolest idea while at Bed, Bath & Beyond the other night... for $
2.99 and $ 3.99 a piece, they had the cutest mini porcelain and
steel containers with a tini ladle attached. Anyway, the idea
would have been to pack the Potted Beef in those and place them
in a basket with the loaves of bread nestled around one of the
containers. Of course, if I really wanted to stretch myself thin
(effort-wise, as happens every so often) I'd also make a couple
of batches of different flavored crackers and toss in a small
block or two of cheese... Hmmm, maybe I'll use that idea for
next year's goodies... Crackers and Cheese. Cool.

Wayne, please let me know how the Potted Beef goes over with your
crew. Ummm, just a note, I remember when I was keeping the bowl
submerged in the pot of water I used a couple of cast iron
trivets to keep the bowl from floating up. HTH.

Also a great idea, but considerably more effort unless you bake-and-
freeze, bake-and-freeze.

Great presentation! You might check at Pier 1 Imports for less expensive
containers. BB&B can sometimes be overpriced.

Now you're over the top with homemade crackers and cheese along with the
beef, but what a super gift!

container would be prone to floating.
