![]() Somebody asked for a raisin pie recipe: Raisin Pie Prepare two-crust pie pastry. Line bottom of 9" pie pan with half of the pastry. Preheat oven to 425ºF. Cook covered until tender (about 5 minutes): 2 cups raisins 2 cups boiling water Stir in mixture of: 1/2 cup sugar 2 tablespoons flour Cook over low heat, stirring constantly, until boiling. Boil 1 minute. Remove from heat. Stir in: 1/2 cup chopped nuts 2 teaspoons grated lemon rind 3 tablespoons lemon juice Cover with top crust. Bake for 30 to 40 minutes or until nicely browned.
