Default Lamb Chops

Often when I get lamp chops at a resturaunt they are nice big chops.

At the supermarket meat counter they only have very small very thick
cut lamp chops. I asked the meat man and he siad it was because the
resturaunt uses Choice cuts - this make no sense to me.

Can anyone tell me what's going on

I can find the larger lamb chops (American lamb) locally at Kroger, etc.
The little bitty ones (I think) are from New Zealand. At any rates Sam's
Club sells small lamb chops and they are New Zealand lamb.

Actually, if I'm reading this right, regardless of the country of origin,
they are different cuts of meat. Lamb loin chops (which I buy) are much
larger than lamb shoulder chops. The shoulder chops are much more
expensive, simply because a lamb only has 2 shoulders. They can get
multiple chops off the lamb loin.

One of the differences is the same as it is for beef. The food service
industry is providing a quality that the consumer is generally not willing
to pay for ergo the stupidmarkets will not stock the product.

WTF are you talking about. Lambs also have only two sets of loins., and from
my shopping and eating experience, shoulder chops are larger in diameter than
loin chops, and thickness depends pretty much on how thick they are cut by
the butcher.
