Default Coconut milk question?

I opened a large can of coconut milk last weekend and used half of it. I've
kept it open in the fridge since then. Does it go off once opened in such a
period of time?

After being opened about a week canned coconut milk will be just fine in the
fridge but if you intend to store it much longer transfer it into a glass
jar... then I'd not store it more than about three months... naturally the
sooner you use it the better. Here it wouldn't last long enough to spoil... as
I have pineapple juice and rum it would be consumed within the day. Hey, I
ain't any lush... I meant I would bake a pina colada rum raisin cake cake.

Default Coconut milk question?

"look on the wrapper as there should be a "once open use within so
many days" warning. however i would bin it as you should never store
any opened CAN of foodstuff in the fridge. it should always be
decanted into a suitable plastic/glass container.can't remember
exactly what happens but it is something to do with metal and exposed
food, i.e. a health hazard.

No it's not. If the can is safe while it is sealed (and it is), it is safe
after opening. Just cover it with a piece of heavy-duty aluminum foil, or
one of those plastic snap-on lids you can by to reseal cans of catfood.

It's not gonna kill you. But the theory is that once air gets at the
food and the can it can start to leach the metal... at least I THINK
that's it. Maybe it's just an oldwives tale... or maybe it's the fact
that it's very hard to put an airtight seal on an opened metal can, so
germs and odours can get in.

Having just opened a "fresh" coconut with plenty of water inside, and
found it moldy, I guessing a can, once opened, is subject to the same
sort of spoilage a can of fruit or veg might be. That is,
refrigeration in *any* kind of container, should be short. Have we
decided if coconut milk can be frozen? I forget. But it's not going to
keep more than a few days in the fridge.

Yeah, I did taste test a little bit first to see if it was sour or smelled
bad, but it seemed fine. Cooked it up with some ginger, brown sugar, sake,
5-spice, cornflower, shoyu sauce and 4 drops of Dave's Insanity Sauce. Made
for a very nice chicken (with two peppers and spring onions) stir-fry.

Mind you, I think the DIS has the ability to kill any known germ. It does a
pretty good job of trying to kill humans who are silly enough to take it
neat in large amounts!!

I buy my coconut milk frozen here where I live - no preservatives. I
would think the canned stuff could be frozen after opening.

Nope... the canning process entails heating, among other preservation steps.

Thanks, Sandi and Peter. I keep buying big cans for "economy" and
using small-can portions. Into the freezer bag it goes next time. :-)
