So, I've got this huge number of sweet potatoes to peel. They fill a
20 gallon can. Many of these are "canners", meaning they're large, crooked, and hard to peel. Is there a simple way to remove the peel without following the traditional GI method of sitting half a day with a peeler and scraping off the skin? boil them whole, let them sit a few minutes.... then you can pull the skin
right off. if you don't want to deal with burning fingers, wrap the tater in a kitchen towel and gently rub. Well, for sweet potatoes, the alternate method is to scald each tuber in boiling water for about 90 second, remove, and once it is cool enough to handle, pull the peel off with a paring knife. I don't know if it's any easier; if you have a good, sharp potato peeler and some practice, a large sweet potato, even in an odd shape, sure wouldn't as difficult as an equal weight of sprouting new white potatoes. Peel them as they cool. I've never peeled and boiled sweet potatoes for a recipe. Janet |
