Default Salmon Loaf Recipes, Please?

would appreciate recipes for meatloaf-style recipes, substituting salmon for
meat. can canned salmon be used? thanks.

Wouldn't destroy perfectly good salmon in a loaf unless it was canned! This
is easy. Drain 2 cans of salmon and pick out the round bones. Place the
salmon in a mixing bowl and stir in 3/4-1 c. bread crumbs (enough to make it
a thick mixture), salt & pepper, 2 eggs, some chopped parsley. Add a couple
of dashes of dill weed to the mix. Stir all this together and then place in
a loaf pan. Bake at 350F for about 20 minutes or until heated through and
lightly browned on top.

My recipe is basically the same, except I throw in a bit of minced onion.
Many people smash up the bones for the calcium value - like you, I don't
bother.

Default Salmon Loaf Recipes, Please?

Here are a few recipes for you to enjoy.

Basic Best Salmon Loaf

1 can (14-3/4 oz.) or 2 cans (7-1/2 oz. each) Alaska salmon
2 cups soft bread crumbs
1/3 cup finely minced onion
1/4 cup milk
2 eggs
2 tablespoons minced parsley
1 tablespoon lemon juice
1/4 teaspoon each of salt and dill weed
Dash pepper

Drain salmon, reserving 2 tablespoons liquid; flake. Combine all ingredients.
Place in well-greased
8-1/2 x 4-1/2 x 2-1/2-inch loaf pan or shape into loaf on greased baking pan.
Bake at 350 degrees F. 45 minutes.

Makes 4 to 6 servings.

Salmon Patties: Prepare salmon mixture as above. Shape into eight 1-inch thick
patties. Pan-fry on both sides in 2
tablespoons oil or butter until golden brown.

Yes.

Salmon Dill loaf

15 oz. canned salmon
6 oz. drained, canned, water chestnuts, diced
1 egg, beaten
1/2 c. diced celery
1/2 c. diced onion
1/3 c. plus 2 tsp. ketchup
1/4 tsp. dried dill (or 1 tsp. fresh)
1/4 tsp. pepper
1/4 tsp. Worcestershire sauce
4 lemon or lime wedges

Combine all ingredients except lemon or lime. Spray pan with non-stick
cooking spray. Turn salmon mix into pan, shape into loaf. Bake 35-45
minutes at 350 degrees. Serve warm or let cool. Slice, serve with lemon or
lime wedges. 4 servings. Each serving: 4 protein, 1/2 bread, 1/2
vegetable exchanges. 25 optional calories.

One more.

1 lb. can salmon
1/2 c. milk
1 1/2 c. soft bread crumbs
4 tbsp. melted butter
3 egg yolks, lightly beaten
1 tbsp. lemon juice
2 tbsp. minced onion
1/2 c. minced green pepper
1/2 c. shredded raw carrot
1/2 tsp. salt
1/2 tsp. pepper
3 egg whites, stiffly beaten
2 eggs, hard cooked

Drain liquid from can of salmon into mixing bowl. Add milk, bread crumbs
and melted butter. Stir to combine and let stand for 5 minutes. Flake and
add salmon, then egg yolks, lemon juice, onion, green pepper, carrot, salt
and pepper. Stir to combine ingredients. Fold in egg whites. Line bottom
of 8 inch cake pan with foil and butter foil generously. Turn salmon
mixture into pan and smooth with spatula. Bake at 350 degrees for 40
minutes. Unmold on warm serving platter and remove foil. Sprinkle with
hard cooked eggs, pressed through a sieve. Serve hot with mushroom or cream
sauce. Serves 4.

Finally;

1 egg
1/2 c. milk
4-6 crackers
1 can salmon
Parsley, etc.

Beat egg. Add milk to egg. Add crackers, parsley and deboned salmon.
Combine and pour into a greased casserole dish. Bake at 350 degrees for
45-50 minutes (until center is set).


I think these will give you the basic idea.

Canned salmon, egg or eggs some bread, crackers, or the like and about
anything else you fancy.

Absolutely add minced onion. Some recipes, I just tend to "wing it" and
assume others know to do the same thing LOL
