I've just steamed 10 oz. frozen spinach. Sauteed some onion, garlic and
celery in butter. I mixed this together with 2 beaten eggs to make...not a souffle, but a quiche sort of batter. I will pour this over some white fish in a baking dish and am baking it at about 350F for 20 minutes or until the fish is fork tender. About halfway through baking I will sprinkle the top with wheatgerm - I told Nancy it was breadcrumbs but I changed my mind! - which I have blended with a little butter and parsley and bake until it's lightly browned on top. It smells heavenly. Jill |
