Turtle brownie
 
I was on my way back to work with a cup of coffee, and I decided to
stop off at a bakery for something to go with it.

I chose a turtle brownie. It was very dense and very dark, with a
strong chocolate flavour. It had walnuts and toffee chips in it, and
it was covered with about 1/4" of very thick caramel. WOW.

I'd like to try making some of these.

Basic recipes go from he

Dimitri

TURTLE BROWNIES
1 German chocolate cake mix
1/2 c. margarine, melted
1/3 c. evaporated milk
1 c. chocolate chips
1 c. nuts (optional)
1 (18 oz.) pkg. caramels
1/3 c. evaporated milk

Melt caramels with 1/3 cup milk in a double boiler before mixing cake. Mix
cake mix, margarine and 1/3 cup of milk. Pat 2/3 of the mixture into a 9 x
13 inch or smaller pan. Bake at 350 degrees for 6 minutes. Take out and
sprinkle chips on top. Pour and smooth caramel/milk mixture over chips.
Pat remaining cake mix on top. This is easy if small lumps of dough are
patted flat in your hands and then used to cover pan. Bake 15 minutes more.
Cool at room temperature and cut. They are easily removed from pan if
chilled first in refrigerator.

14 oz. pkg. caramels
2/3 c. (5 oz. can) evaporated milk, divided
One box (18 1/2 oz.) German chocolate cake mix
3/4 c. softened margarine
1 c. pecans or walnuts, chopped
12 oz. semi-sweet chocolate pieces

Combine caramels and 1/3 cup evaporated milk on top of a double boiler.
Stir mixture until melted; set aside. Combine cake mix, remaining milk and
softened margarine. Blend until mixture holds together. Stir in nuts.
Press 1/2 of cake mixture in a greased 13x9 inch pan. Bake for 6 minutes at
350 degrees. Remove from oven and sprinkle chocolate pieces on top. Pour
melted caramel evenly over top. Crumble remaining cake mixture over
caramel. Bake at 350 degrees for 15 to 20 minutes. Cool completely. Cut
into bars.

Wow, that sounds great. I don't have a recipe, but wouldn't broken
up Heath Bars be nice for the chocolate and the toffee?

If you absolutely had to have them fresh from the oven, but have no
time or all the ingredients to make them from scratch, Duncan Hines
sells them in an 8x8 pan size mix for about $2. It's actually pretty
good for a quick-fix type of thing.

That's a great suggestion! I went back today and had another one. I
was mistaken about the toffee--the walnuts were on top of the brownie,
and the caramel on top of the nuts. As I was eating this dessert
yesterday, my upper teeth bit into the caramel first, and quickly into
the next layer, the nuts. The flavour of the caramel plus the
immediate crunch of the nuts led me to mistakenly think there were
toffee chips.

In any case, it is one of my new favourite bakery items. :) This
bakery has a nice cookbook with recipes by the owner, including the
caramel brownies. I will probably pick up a copy in the next few
days.

To-Die-For Turtle Bars

Amount Measure Ingredient Preparation Method
Crust:
1 cup flour
1/2 cup pecans ground
1/4 cup sugar
1/2 teaspoon salt
1/2 cup cold unsalted butter cut into bits
1 egg
Caramel:
1 cup butter (1/2#)
1/2 pound brown sugar
1 cup light corn syrup
1/2 cup powdered sugar
Topping:
12 ounces smei-sweet chocolate chips
8 ounces whole pecans

For crust: Stir together the flour, nuts, sugar, and salt. Add the cut
up butter and work mixture until it resembles coarse meal. Add the egg
and mix well. Press into 9x13" pan. Bake at 350° for 18-20 minutes or
until a light golden color.

For caramel: Combine butter, sugar, corn syrup and powdered sugar in a
sauce pan. Bring to a boil on medium-to-high heat. Boil, stirring
constantly, 15 minutes. Pour caramel mixture over warm crust.

Sprinkle chocolate chips evenly over caramel; let stand about 5 minutes.
Spread melted chocolate evenly with a spatula. Arrange pecans in rows
on top of chocolate.

Cool completely at room temperature before cutting. Makes 18-24 bars.

I think the Strib has its math mixed up. Some of the numbers look like
they're for the whole pan (the 3095 calories and the 212 mg
cholesterol). Unless one is a binge eater, he/she will not get through
the whole pan.

When I make these, I use a darker chocolate cake mix than German. I just
like chocolate!

Which seems a reasonable approach. 'Serving size' is a subjective
measurement. If you include "cut into 12 pieces; 1 serving = 1 piece,"
you can be definitive. Otherwise, you can just leave the math to the
reader. :-)
