I've got turkey bones, celery, garlic and ginger, preserved turnip for
saltiness, black peppercorns ...

please throw out any ingredients to add to improve this very basic soup.

I would throw out the turnips.
Oh......... you want added ingredients to make it better. How about a can
of diced tomatoes? and of course onions. Add some chicken/powdered soup
stock, perhaps noodles. Voila!

I would buy one of those rings of Eckrich sausage, like Polska Kielbasa or Pork
or Beef smoked sausage, and dice some of that up for your soup. I would
consider adding a can of diced tomatoes and the juice to your soup. A little
diced potato and onion wouldn't hurt either.

You'll need a couple cans of chicken stock to boil the bones in; I would cook
them at least an hour and probably 2 or 3 hours until the bones are clean. I
strongly advice you that you do not add any other ingredients at this point
(except for possibly a bouquet garnee) because the bones and broth have to be
strained very well and the solid which gets caught in the strainer has to be
cleaned very carefully for pieces of cartilige and small bone fragments. This
is the messy part of the soup making; when you put all the strained meat back
into the soup and discard the unedible items, it is time to put the tomatoes
and sausage and other vegetables into the mix.

A bay leaf. Just about any meat-based soup or stock
benefits from a bay leaf. It'll have to simmer for a little
while to release the flavor, and of course you remove
the bay leaf before serving.

over night to draw off fat. Place plain stock back in pot and add a
whole chicken and some fresh cut up vegetables and a can of tomatoes.
Simmer until chicken is falling off bone. Remove meat add to pot with
veg. You may also refrigerate this lot to draw off fat from the
chicken. When ready to serve bring to simmer and add noodles and some
herbs like dill and thyme.

Thanks, Everyone. I strained out all the stuff and I'll use it to parboil
that meal's vegetable instead of stir-frying. So goes the last of the
Thanksgiving turkey.

Remove celery. Add Napa cabbage or bok choy.
