I've never made bologna spread myself, but a dear friend adds mayo
and sweet pickle relish to hers -- yum!

In either of the recipes just use bologna.

Dimitri


Ham sandwich spread.

1/2 c. ground cooked ham
1/2 c. ground bologna
1 hard boiled egg, diced
2 tbsp. green pepper, chopped
2 tbsp. pickle, chopped
Mayonnaise
Salt and pepper, to taste

In a large mixing bowl combine ham, bologna, egg, green pepper and pickle;
add mayonnaise to obtain easy spreadability. Refrigerate 2 hours then
spread can be used for sandwiches.

Spam spread.

1 c. mayonnaise
2 tbsp. sugar
2 tbsp. vinegar
1 tsp. salt
1 sm. onion
3 raw carrots
1 can Spam
6 hard cooked eggs, boiled
1 sm. green pepper

Grind Spam, eggs, carrots, onion and green pepper. Use coarse grater or
grinder. Add remaining ingredients; mix well. Good on Ritz crackers or as
a sandwich spread. Makes a big recipe.

My parents used to grind sweet pickles and sour pickles with the bologna.
Then simply add mayo and mix.

Father made it with bologna, onion, dill pickles and put it all through the
grinder. Sister's mother-in-law did balogna, sweet pickle relish (after)
hard boiled eggs and onion then added mayo.

There was some stuff that my mother used to buy at the grocery, called Herrod's
or something that sounded like that. We kids loved this stuff. I would guess
that it was ground bologna, sweet pickles and mayonnaise.

My mother made that later, too. She had a grinder attachment on her big mixer.
If you make this, your kids will come running.

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 pound bologna -- ground
1 large green bell pepper -- chopped
4 tablespoons sweet pickle relish -- or 4 pickles chopped
Hellmann's Mayonnaise -- as needed

Grind all the ingredients together (fine grind). Add pickle juice and mayonnaise to
taste. May be served on lettuce as a salad or used to make a sandwich.
