Default Meat cut for jerky?


Can anyone recommend a lean beef cut for making jerky? I've been using
top round / london broil with good results, but there is still more sinewy
fat in it than in the store-bought jerky.

Beef rump roast. Sometimes I buy round steak for making jerky when it is
on sale cheap enough.

Default Meat cut for jerky?

Bottom round roast (usually square cut when buying from supermarket) works
best for me. I keep telling myself that I'll never use top round again -
for the reasons you specify - but when its under $2/lb ...
