Pesto:

On sliced tomatoes.
Over fish fillets
Slice of French bread, sliced tomatoes, spread on pesto, lots of
Parmesan cheese, lightly broiled or heated in oven.

Oh, I had grilled chicken thighs just last week that were marinated
in pesto with lemon and lime juice added. Oh, were they good! and
moist and tender, too.

My favorite way is to make a spinach - walnut - feta pesto (heretic !) then
stuff some chicken breasts with feta and capacola and bake the chicken in
the pesto with some more cap and pesto layered on top. Bake covered at
first, then uncovered to make a crust.

Serve with a side of herbed pasta and a few lemon wedges.

I'm sure it would work with basil pestos as well.

Tom,
You will find some great ideas from the people in this NG. However,
I like simple recipes, so I just buy a jar of Classico Basil Pesto and
add it to Penne pasta. I then top it will parmeasean cheese. I have
fresh baked crusty bread and real butter and that is it. Too good! I
just love it and now I always make it for my Sunday dinner.

And believe me, I look forward to it!

Tom,

Toss w/ angel hair pasta. If you keep some pesto in the freezer (freeze in
ice cube trays, then pop out and store in freezer zipper bags), you can thaw
it in the microwave and have a wonderful meal ready in almost no time.

Put it on pizza, in vegetable soup,...

One of my favorites...get a loaf of crusty sourdough or Italian bread, some
summer-ripe tomatoes, some fresh mozzarella. Slap it all together, slather
generously w/ pesto. Incredible hot weather meal.
