Question about the preparation of gelantine for a quark gateau
 
Dear news group

I got a question about using gelantine.

When I read the recipe of making a quark gateau, they say "take 6 leafs of
gelantine". When I check the gelantine package, they say "use 6 leafs with
0.5 liter of cold water, soak them for 5-7 min and squezze them slighty at
the end".

So the question is, which part do I have to take at the end ?

1) Do I need to pour the 0.5 liter water with the gelantine extract into the
quark or
2) should I heat the gliber remains of the gelantine and use this part ?

For gelitine to work correctly it needs to be soaked in cold water before
being mixed in anything. It seems to help it disolve better. The leaves
should be transparent and very soft and pliable after the cold water soak.

"At the end" in this case means that after the leaves have soaked the
required time squeeze them. This is to remove any excess cold water. The
soaking period will require anywhere from 7-10 minutes.

Hmm, perhaps you mean 'galantine', a type of aspic?
