![]() I made something we haven't had in years--my husband's grandmother's braised pork chops. Everyone loved them. I found chops at Costco this weekend that were well over 1 inch thick. I had never bought meat there before, but these were terrific. 6 boneless center cut chops 2 large onions, chopped 2 cloves garlic, minced 1 1/2 tsp. rosemary leaves, chopped finely 1/2 tsp. celery salt 1 tsp fresh ground pepper Saute onions in a little oil till translucent; set aside. Brown chops in a small amount of oil, drain. Add garlic, onions, spices, and enough water to barely reach the top of the chops. Cover. Simmer over very low heat 2-3 hours until tender. Make a slurry of ~2 tsp cornstarch in water and add to the pan liquid. Simmer and stir till slightly thickened. Adjust seasonings. Serve over rice. |
