Wayne's pie story got me thinking about pie, and which are my
favorites. Do you have a favorite pie? I don't think I can limit it to one. I love cherry pie, apple pie, pear pie, cranberry walnut pie, cherry cranberry pie, pecan pie, chocolate pecan pie, brown sugar pie and pumpkin pie. I'll eat just about any pie. Alas, my source of good blackberries just dried up. My father informs me me pulled all his out because they were attracting raccoons. His dog "Rusty" loves to fight with raccoons. Dad says when Rusty catches a coon, someone is gonna die (and some day the coon will win.) A coon managed to get Rusty in the pond once but somehow Rusty won anyway. Blackberries don't grow up here, just lovely raspberries that are so flavorless by comparison they are barely worth picking. Pitiful. How do you make cherry cranberry? Best regards, Bob |

My other summer favorite is Strawberry-Rhubarb I only like berry pies thickened with Flour where the juice is somewhat runny. I once went to our local Blackberry festival drooling after the Blackberry pie. It's horrible, flavorless jelly-like consistency almost made me puke. My winter favorites would be Pumpkin & Pecan I am also curious about the Cranberry Walnut one. Is this on your web site? Fresh Whipped cream covered the tops of these pies and many other flavors and one outfit baked these pies for all the restaurants. I do not remember the name, it was Mrs. Something or Other. Mrs. Speer, perhaps? I will ask a friend, who may remember. Those pies were really delicious and I usually do not like pies. |

I really only have pie around the holidays, so I like pecan and
pumpkin pie. They taste like home. My brother's mother-in-law makes a chocolate fudge pie that is delicious. Tara |

~~~ CHOCOLATE PUDDING ~~~
2 egg whites 2/3 cup unsweetened cocoa powder 2 Tbls corn starch 2 1/4 cups skim milk, divided 1/2 cup granulated sugar 1/8 tsp salt 1 tsp vanilla extract 1. In a small bowl, lightly beat egg whites and set aside. In a large bowl, combine 2/3 cup of cocoa and cornstarch. Whisk 3/4 cup of milk into cocoa mixture until completely smooth. 2. In a large heavy saucepan, combine remaining milk, sugar, and salt. Mix well. Bring to a boil over high heat, whisking constantly. Remove pan from heat. 3. Whisk cocoa mixture into hot milk mixture. bring to a boil over medium-high heat; boil for 2 minutes, whisking constantly. Remove pan from heat. 4. Gradually whisk 1 cup of hot cocoa mixture into egg whites. Pour mixture back into the pan. Cook over medium-low heat for 2 minutes, whisking constantly. Do not boil. Remove pan from heat. 5. Add vanilla; blend well. Pour pudding into serving dishes... or chocolate graham crust. Cool to room temperature. Cover and chill for 1 hour. Pour into pie shell. Bake at 400 degrees for 35 minutes or until an inserted knife comes out clean. For me, the trick to a good pie is finding one that's not too sweet. Even with the recipe above, you might want to halve the amount of sugar. I'd like pecan pie if I could figure out how to make it less sweet. A friend of mine, she'd make a chocolate cream pie every year for her uncle. He was diabetic, but once a year, he had to have her chocolate cream pie. So, she made it. She and her husband loaded up the car with the two kids, blah blah blah. They drive off. Few miles later, they get onto a busy road. (you getting where I'm going here?) Speed up. All of a sudden, there is this weird ... scraping noise. What on earth? (giggling) She looked back just in time to see the pie that had been left on the roof, going end over end just to land SPLAT on the windshield of the guy's car behind them. In between laughs I said, he must have thought Maybe elephants DO fly! Okay, about the cat. My inlaws agreed to watch my sil's puppy. They had a cat that didn't take anything from anyone. Sam, the HUGE red cat. Cat that would jump off the second story. So, the puppy is all like CHECK. IT. OUT! Food! Well, it was the cat's food. Sam was eating and the puppy came flopping over to share. Sam didn't even look up. (this is a visual) He just picked up his leg, extended his claws, and put them through the beagle's ear. All the time the dog kept yelping and Sam kept calmly eating his food. With his leg sticking straight out and his claws through the dog's ears. When Sam was done eating, he released the dog and walked away. nancy |
