Anyone willing to share their own Indian Curry recipes? Im looking for new
ideas when making a nice curry.... i like them hot |

Chicken Balti (serves four) 2 chicken breasts (cut into cubes) 2 sliced onions 2 tbsp vegetable oil 1 tsp garlic paste 1 tsp ginger paste 1 tsp tumeric 1 tsp salt 1 tsp red chilli powder 1 tsp garam masala 2 small tomatoes (chopped) 100 ml water 10g coriander Method: Heat pan to medium, add oil and onions and cook onions until translucent (10-12 minutes) Now add the chicken cubes, increase heat to high and cook for 7-10 minutes. Regularly mix chicken around similar to stir fry cooking. This avoids cubes sticking to pan. Reduce heat to medium, add garlic and ginger paste and blend. Add spices (garam masala, tumeric, red chilli powder and salt) and cook for 4-6 minutes. Add chopped tomatoes and 100ml of water, increase heat and cook for 5-7 minutes. Once dish is cooked add chopped coriander and serve with naan. I also use basmati white rice. Tips: Do not overcook the onions. If overcooked they will give the balti a burnt taste. Be patient. Let the elements of the balti and the spices cook through fully, this will develop the taste. If you cook it too quickly you will get a different taste. Regards, Emrys Davies.
