I don't often have ground beef, but there was a sale...and I
remembered Joe's Special. Recipes abound on the web, but you hardly need one. Saute diced onion and garlic; add beef and brown; add thawed, drained spinach and mix in; add beaten eggs and stir around 'til cooked. Season and serve. Proportions for 4 servings are 1lb beef, 10oz pkg frozen spinach or equivalent, and 4 eggs, but can be adjusted to taste. You know how much onion you like. Seasonings include s&p, and sometimes basil and/or oregano and/or a little nutmeg (for the spinach, I suppose). Like almost anything vaguely Italian, it would not be unusual to finish with a little grated Parmesan. |
