This is a very broad question, several cuisines of Asia use these
ingredients in many of their dishes. Google gives 60,000 hits on 'ginger
coriander recipe' This will give you a start on the spices, their history
and some recipes:

the only advice i can give you is don't use powdered ginger or coriander
(unless you mean coriander seed) fresh coriander is also called cilantro.
fresh ginger root and fresh coriander is the way to go.

IF you go to google.com and enter "ginger" and "coriander" in the search
box, you will get lots of ideas.
Good luck.
