Default Gallo Pinto (Costa Rica)

Wondering if anyone has a recipe for this wonderfull Costa Rican breakfast
dish. As far as I can tell it is cillantro, brown rice, Lizano sauce, onions
and chilli. Funny they call it Gallo seeing as there is no chicken in it.
Apparently it is called this because chicken is added to the leftovers to
make a lunch...

Default Gallo Pinto (Costa Rica)

Costa Rican Gallo Pinto

1 pound cooked black beans
8 cups of cooked white rice
2 medium onions
6 cloves of garlic
1/2 sweet red pepper (not hot)
dash of Worcester sauce (or equivalent - We use local Salsa Inglaisa but you
will have to come here to buy that)

Boil black beans in pressure cooker with 3 cloves of garlic and a hefty
pinch of salt until cooked, use directions on the package of beans. Sauté
onion, garlic and sweet pepper till soft - Not brown. Add the rice and the
beans and mix together. Season if needed, and add the Worcester sauce or
better yet, the Salsa Inglaisa.

This simple delicious dish is usually served with scrambled or fried eggs
(over easy), in Costa Rica.

Enjoy.
