Default Midnight snack

Pecans (several trees in the yard and bags frozen already) and blue
cheese on toasted sour dough bread. Broiled until the cheese just
began to turn golden.

Yum.

That is good! Reminds me of an appetizer we used to make. Triangles of
homemade melba toast that had been toasted with a light brushing of garlic
butter, then topped with a bit of grilled bacon, followed by crumbled blue
cheese and coarsely broken pecans. Broiled as you indicated. I'll have to
start making these again!

Hmm...those do sound good. Bring them to the cook-in.

Speaking of which, do we have the date, restaurant and time planned
out, for the cook-in planning session?

I think that we've settled on Friday, 8/27, at Baby Kay's. I can't be
there much before 8:00pm, but everyone else can begin earlier if they'd
prefer. Menu at:

Homemade Melba Toast isn't toasted, it's baked.

HERBED MELBA TOASTS

Can be prepared in 45 minutes or less.

1 tablespoon unsalted butter, melted
1/8 teaspoon dried dill, crumbled
1/8 teaspoon dried thyme, crumbled
4 slices of homemade-style white bread

In a small bowl stir together the butter, the dill, the thyme, and salt and
pepper to taste. Roll each slice of bread as thin as possible with a rolling
pin and trim and discard the crusts. Brush both sides of the bread with the
butter mixture, cut each slice diagonally into 2 triangles, and bake the
triangles on a baking sheet in the middle of a preheated 350°F. oven, turning
them once, for 15 minutes, or until they are browned lightly and crisp. Let the
toasts cool on the rack.

My parent gave me two quarts of shelled pecans back in May. My new
house has a number of trees in the yard. (They don't produce shelled
pecans, though.)

Anyhow, it occurred to me that I oughta get to eating those frozen
pecans because the new crop is coming up in a few weeks. Last year's
nuts must go.

It's yours. Use it in nutty health. But you need to fix the spelling
of Michael.
