Default Gas stove is a PITA

Ok, I confess. I HATE cooking on gas. Always have. The "low"
setting is never low enough for me. Is there a ceramic tile or some
type of heat diffuser I can purchase to better distribute the heat
while the stove is on a LOW setting?

I have something akin to this model, except that mine is a solid
plate:

I'm sure stove controls vary considerably. Mine has low, med, & high
'notches', but I can position between the settings. I.e., rice cooks
halfway between 'off' and 'low.' For just barely wam, I use the
diffuser with this setting.

Of course there are heat diffusers. Look at any local Williams Sonoma or
other cooking outlet and then just choose what you'd like

I love my gas stove but as you say low is not low enough. I picked up a
couple of diffusers at Walmart very cheap and work great.

Newer stoves, those with pilotless ignition, have top burners that are easily
adjusted for low flame/simmer setting. Unless your stove is one of ye olde
pilot light models there is no need for flame tamers, diffusers, and such...
and then it's time that fercoctah antique is replaced.

I have an economy GE (2 yrs old) basic gas stove. The largest burner is
pefecting for Wok/stir frying and the smallest burner on low is a
perfect ever-so-gentle simmer for soups, sauces or beans. Cast iron
cookware adds to the perfect moment but I also use thin stainless steel
camping pots on occasion, too. The best thing that ever happened was my
old electric stove dying.

I agree. I hate cooking on gas too. I found a heat diffuser at the
hardware store that's a cast iron disk with enamel on one side. I don't
remember the brand name but it works like a charm.

For a heat diffuser, try using a plain ol cast iron skillet.

The other thing you can do is lift the pot higher. I've used bricks
covered with foil for this. A caterer I used to work for used an
old tart ring.

I've noticed high-end gas stoves keep the pot well above the flame.

And I was gonna say. Just put the smaller pan in a bigger pan if you
want diffusion.

There is a good gadget available in most hardware/Walmart, etc. type stores.
It is a couple of layers of perforated metal, (air space in between) with a
wooden handle. Works great.

My problem is I have to show up at a facility and work with
whatever equipment they have. I've had to resort to
the brick solution many times. High end? I wish.
