Zydeco is the name of Cajun music, sure enough, but it's a linguistic corruption of "les haricots." Green beans. The lineage has been pretty well established from an expression in daily currency "les haricots sont pas sale'" - long story. The Cajun "R" is trilled rather than formed on the palate as it would be in France.
