Never heard a Sopaipilla called a "cookie" - it's normally a bread
served with the meal. : SOPAIPILLAS MEXICAN FRIED COOKIE : 4 cups flour : 2 tsp. baking powder : 2 tsp. salt : 2 tsp. shortening : 1-1/4 cups water : Sift together dry ingredients. Add shortening and water and : knead until smooth. Put into plastic bag and let stand for 2 : hours. Roll very thin and cut into small triangles. : Fry in deep fat heated to 375 degrees until golden brown. Turn : once. Drain on paper towels and serve with honey or sprinkle : with cinnamon sugar. Looks like a nice recipe. Sopapillas should puff up, there should be
air in the middle. Cook them until they are the color of donuts. My mother cooked these when I was a child and I have made a lot of them over the years. They are meant to be a dessert but I have cooked them for breakfast. I sprinkle them with a little powdered sugar and I serve them with honey. Never heard them called a cookie before. They are more of a pastry.
