Default Dinner

Corned beef hash. The real stuff. I cooked a batch of hash browns
and mixed them up with some of yesterday's corned beef (chopped).
Then I refried the mix to get a crust on the bottom.

Served with eggs over easy and sliced oranges and apples.

Yum.

My secret shame is occasionally eating *canned* corned beef hash!!
Love it! But the real thing is just ... divine. Modom, can I come to

Blech!

See my corned beef recipe as per the rfc cookbook. Make EXTRA! I never cook
less than 20lbs. Trim excess fat from about 2 pounds of cooked left over
corned beef (what's left over corned beef you may ask). First caramelize about
three pounds diced onions in large pan - I render some of the trimmed corned
beef fat for frying. Finely dice lean corned beef and add to pan, continue
cooking over low heat. Dice about six left over spuds and add to pan, continue
cooking over low heat. With spatula turn mixture and continue to fry,
repeating turning and frying until mixture begins to become slightly crisped
about the edges - go slow, test your patience. Then with the back of a
tablespoon press eight depressions in mixture and crack a large egg into each.
Sprinkle with fresh ground black pepper and cover pan and cook until whites are
set but yolks are runny. <S> Eat.</S> Fress!

Hi Helen!

Corned Beef Hash is really a simple dish, but I'm sure that there are
many variations on it. I have always made it without a recipe, the way
my mother did, so these measurements are approximate and can be varied to
taste...

1/4 cup unsalted butter
3 cups cooked corned beef, chopped or cut in 1/4-3/8-inch dice
3 cups cooked waxy potatoes, chopped or cut in 1/4-3/8-inch dice
1 small or medium yellow onion, chopped or cut in 1/4-inch dice
1-2 cloves garlic, finely minced
1/4 cup brown gravy, or gravy made with liquid from cooking corned beef
freshly ground black pepper, to taste
1/4 cup parsley, finely chopped
1/4 teaspoon dried thyme

Melt butter in large skillet and sauté onion and garlic until onion is
transparent, but not browned.

Add remaining ingredients, tossing to mix well. Press mixture down into
pan in one large patty or in smaller patties. Cook over medium heat
until bottom becomes brown and crusty. Turn (a single large patty can be
flipped onto a plate and slid back into pan) onto other side and cook
until brown and crusty. May be kept warm in a slow oven until ready to
serve.

Note: Use an amount of onion and garlic that you prefer. I like the
larger amount.

I've never eaten canned corn beef or canned corn beef hash. I don't think
I want to try.

After St. Patrick's day, we make hash with the leftovers. I used a recipe
the first time, but haven't since then.

corned beef, cubed finely
potatoes, cubed finely
onion, diced
green pepper, diced (red pepper is nice also)
(sometimes I put in some diced garlic)
oil for frying
eggs

Steam the potatoes or boil them in water just to cover for 10 minutes.
Test for doneness, you don't want them cooked too much. Drain and add to
hot oil in frying pan. Cook until they start to brown a bit and add the
onions and peppers. Cook until onion is soft. If the frying pan is oven
safe, make depressions in the hash and crack the eggs into them, else
transfer the hash to an oven safe dish and do the same. Cook in medium
oven until egg whites are set but yolk is runny.

Home-made is far better, of course, but canned corned beef hash isn't too
bad once you get past its resemblance to dog food.

So basically the only difference is using home cooked corned beef instead of
canned. Hmm. Have to try that.
I caught my hubby with my corned beef hash, he might like the fresh version

Mary's Kitchen also makes roast beef hash. Taste is subjective. I like
both and they don't smell like any dog food I've fed my dogs. I'm afraid I
haven't tasted any dog food so can't comment on that.

Here are a variety of brands you can get:

Here's a recipe:
Corned Beef Hash

12 ounces chopped corned beef
2 whole potatoes cooked and grated
1/2 cup chopped mixed peppers
1/2 cup chopped red onions
1/2 cup chopped scallions
1 tablespoon chopped fresh parsley leaves
1 tablespoon chopped fresh rosemary leaves
1/2 teaspoon salt
1/2 teaspoon fresh pepper

Mix all the ingredients together and saute in a pan until golden brown,
about 8 minutes.

I think you're meaning something like "comfort food" or maybe "if it ain't
broke, don't fix it"

Some people just don't understand these concepts and always try to push the
old "my way is better" or "it's my way or the highway"

Unless, of course, the group strays from a topic which they don't wish to
stray from. Oh, that's the "my way or the highway" thing, isn't it?

Hey, I couldn't care less what someone else eats and, in this case, if
they prefer to eat canned meat or canned hash that's fine with me. I
merely meant that if someone hasn't tasted another version of something,
how can they say they *prefer* the one they have tasted. There has been
no comparison, therefore, there can be no tested preference.

I have eaten both the canned and the homemade. I still will, but I
*prefer* the homemade. If you want canned, I'll fix it for ya. <G>

If you like corned beef, I would recommend that you try cooking one. It's
very easy, cheap and tasty. Take the corned beef and put it in a pot.
Cover with water. Cook according to the directions on the package. About
an hour before it's done, toss in some peeled whole potatoes and carrots.
When it's done, take everything out and toss in a quartered head of
cabbage. Cook for 15 minutes and then eat!
