Default Arugula!

Arugula!! "x^p I still haven't quite developed a "full appreciation".

To me, arugula is one of those herbs you add just enough of to a mix of
greens to not recognize what tweaked the flavors. When I can say,
"definitely arugula" I consider it too much.

Still, I am starting to wonder what potential a wilted arugula salad might
have, flavored with sesame oil. Or, other uses of cooked or blanched
arugula.

What are some names of classic ethnic dishes using arugula as a main
ingredient? I can research the recipes, but I'd like some classic names to
look for.

Thanks
