Those that work the breakfast and into lunch crowds aren't always tipped as considered 'standard'. A lot of times, no matter what the bill amounted to, I used to have customers that tipped $ 1.00. Especially some of the elderly customers - and they were the ones that ran your butt off! I always kept track of my tips and there was one year that I made $ 50.00 (actually $ 47. and some change) less than what my tax statement said I did... not worth fighting the restaurant for that. When I was able to switch to the dinner crowds - tips dramatically changed. Cyndi |

When I > was able to switch to the dinner crowds - tips dramatically > changed. We'll have to agree to disagree. I have worked both and, yes, the breakfast shaft can be pretty grim at times -- especially when the restaurant is courting the silver-n-gray brigade. I was lucky in both night and morning shifts. People asked for me and tipped me well enough to support my college addiction and sport car habits. But you also kept records and that drives my point home. Allowing someone to claim age as a reason for not keeping records is sheer laziness and reason for an audit. The Ranger |

I don't > remember that part. I don't believe it said one way or the other. So I was speculating on how they could get away with not paying it and leave the restaurant before it was noticed, as that appears to be what happened. In my experience it is always added to the bill, so if that's the case and the waiter comes and takes the bill and the cash or credit card and goes to ring it up, in the case of cash he/she would see right away that they did not get enough money to cover the bill. So, if it was added into the bill the only way you could get away without paying it would be if they brought the bill to the table and left it there, planning to come back in a few minutes to take the payment, and the dining party just threw cash on the table to cover the actual meal plus a small tip (the article said about 10%) and walked out. If they had waited for the served to return and take their payment and the payment was less than the total on the check, then something would have been said at that time, I would think, and it wouldn't have come to having to chase them down the street and arrest them, which is what happened to the best of my recollection. Anyway, that's what I was getting at. But if it wasn't added to the bill then they could have paid by credit card or cash and then left a smaller tip than they were supposed to have done and just walked out before it was noted. > Why would you walk out for the 18% gratuity? Just > curious. Well, because it's one thing if the management wants to make sure that a large party doesn't end up stiffing the waiter by adding a "service charge" or mandatory "gratuity" if it's the customary 15% or less (many places I've been to only charge 12% and you make up the difference to the !5% or higher if you think the service was worth it. But I think 18% is too high. I don't even like the mandatory 15% or even the 12% because there have been many times when the service was not worth it and I would have liked to leave a smaller amount. (Yeah, I know I can talk to the manager, etc., but I don't always want to take the time and hassle of dealing with that.) Anyway, I grudgingly accept the lower % but 18% is off the wall as far as I am concerned. I have always wanted to eat at Brennan's in New Orleans and when I got the chance to go there I was really excited. I couldn't wait to have the Bananas Foster. I made a reservation months in advance. I was meeting my sister and her husband there for dinner while we were both on vacation in N. O. at the same time. So, we get to the restaurant and are seated and the waiter comes to take our order and I ask for separate checks. No deal! Huh? What's the big deal? (I don't even want to hear all the "so why couldn't one or the other of you just pay the check and get reimbursed by the other" comments - there are reasons - okay?) So I'm furious. I ask to be seated at another table nearby. They think I'm nuts. Too bad it didn't work. If it had been a place where you didn't need a reservation months in advance it woulda worked. We ended up eating at Kakoo and Ralph's. It was great. Well, I don't feel that way about it. I just don't like being pushed around by snooty restaurants or even non-snooty ones! It was a matter of principle. And there is nothing wrong between me and my family. If there were I would not have been dining with them! The reasons for requesting separate checks have nothing to do with a "family feud". Don't feel sorry for me. I can always make my own Banana's Foster from Brennan's own recipe so it's not a big deal. And we had a great time at Kakoo and Ralph's and great food. I had crab done 7 different ways, and except for the soft-shell crab it was all delicious. I would have actually felt worse about it if I had let Brennan's force me into doing it their way. I totally disagree. If I go there to have the house specialty, like Bananas Foster, then, obviously, I'm going to "have it their way", but if I just go there to eat and decide to order salmon and they refuse to cook it properly for me (as in *not* rare!), then I don't think they have the right to tell me that's the only way they will cook it. And if I want a dish without the mushrooms and it's not something that's already made up with the mushrooms already in it then I damn well will "have it *my* way". Of course if I had known then, what I know now about both parties charging their own portion on their own credit card, something I've done many times in the last 10 or 12 years, it wouldn't have been a problem, but they probably would have given me a hard time about that, too, with my luck. I don't know when that became a common practice. Anyway, this was almost 20 years ago. Anyway, as far as I am concerned the reason for going to a "top quality" restaurant is so that I can have well-prepared food and good service. Not to cater to the ego of some wacked out chef who thinks his way is the only way!
