Sift together one cup all-purpose sifted flower with 1/2 teaspoon salt.
Beat two eggs lightly and add to one cup milk. Combine the dry and liquid mixtures and beat until well combined. The batter should have the consistency of heavy cream. Heat iron popover pans until sizzling hot and butter generously. Fill the cups 1/2 full with batter and bake in a hot oven (450 F.) for 20 minutes. Reduce the temperature to 375 F. for 20 to 30 minutes longer. --The Gourmet Cookbook Volume I. 1950 (c) Gourmet, Inc. One of the great old fashioned comfort foods, imho. Andy |
