Has any one ever roasted asparagus? I have heard its very good roasted
with thyme. Does any one have any other recipes for it. Elaine

When it's in season, I grill asparagus over a hardwood charcoal fire. It is
excellent.
Simplest recipe is to coat the spears with any cheap bottled Italian salad
dressing, then grill over a hot fire for about 5 min. then turn and grill for
about 4 min. more.

For the smaller spears, you can skewer them together like a raft. It's
easier to turn them over.

I use one of those "sitr-fry" baskets for the grill.

I like mine sauted with a little sprinkle of salt when done. I also like it
wrapped in a peppered ham (prosciutto, for example), baked and then given a
light cheese sauce.

Oh! And I also like to chop asparagus with one or two other vegetables, add
a chile, saute then use it as filling for an omelette. Fry your eggs until
partially set, put the asparagus, et. all., in the middle, fold to your
plate and sprinkle with cheese...

I'm with Blair on this, though I have been known to splash a touch of
balsamic on them after they come off the grill. Also nice to grill
alongside similarly treated squash, eggplant, mushrooms, etc. Chop 'em all
up fine and mix with a little balsamico. Top toasted bread. Consume.
Salivate for more.

Stir fry ass-para-guy egg foo yong!

or

Asparagus Guacamole

4 Cups (1 lb.) cut, trimmed, fresh Asparagus (or)
4 Cups (2pkg. 10 oz. Each) frozen, cut Asparagus
1 small garlic clove, minced
2 tsps. Lime juice
1/4 Cup canned, chopped green chiles
1/2 tsp. Salt; 1/2 tsp. Cumin
2 tbsp. finely chopped onion
1/2 Cup chopped, seeded tomato

Cook Asparagus in small amount of water until tender. Drain well and cool.

In a food processor, process asparagus and next five ingredients until mixture
is smooth (30 seconds). Scrape bowl frequently. Remove from food processor and
stir in onion and tomato.

Chill thoroughly before serving with tortilla chips, cut vegetables, chicken or
seafood

Asparagus must be Steamed! Best Taste in the world! I use what my mother
called a double boiler (it's a funny double pot which has holes in the
bottom of the top part). Cook it for around three minutes, or to taste.
comes out still tasty.

eat it plain, or with a pinch of salt.

lemon/lime might also be tasty, but a waste of asparagus.

Kat,

Sinful summertime treat along the lines of the previous recipe.

Prior prep

Roast a red pepper, mix in the fod processor with a half pound fresh ricotta
cheese, olive oil, garlic cloves and some basil and oregano. Blend until
uniformly pink/rose colored. Let sit in the fridge over night.

Couple yellow squash
Couple zucchini
Asparagus spears
Button mushrooms

Slice squash and zucchini. Prep asparagus and de-stem mushrooms. Toss all
with olive oil, salt, and pepper in a bowl. Grill until colored, dice all
finely, mix in bowl with a little more oil and good balsamic. Cool in
fridge

Take a good loaf of bread, slice to preferred thickness. Brush with oil and
grill until nicely colored. Smear warm toast with roasted red pepper
ricotta. Spoon diced veggies over the top of the bread. Enjoy (immensely)

try a good hamburger basket... the kind I've got is wonderful... perfect
even for grilling marinated veggies.

Then you're missing out on one of life's best experiences... stir fried
asparagus are the best. Grilled are actually the worst, because by the time
the stem ends are cooked the tips are ruined... all shriveled and limp like
your widdle pecker. With stir fried the middles can be added at the midpoint
and the tips can be held back till near the end and will be plump, firm, and
voluptuous.

I usually cook 'em loose on the uper rack of my gas grill. If they're real
small, I'll skewer 'em together on a bamboo skewer.

Fried asparagus is great. Cut the asparagus into 1-2" pieces. Heat up a pan with
a bit of oil in, toss in some sliced garlic and a good pinch of dried chilli
flakes then the asparagus and toss around until cooked. Serve it with cooked
pasta and sprinkle with freshly grated parmesan.

Ok, I've GOT to look for one.
My brother in law likes to grill next to the pool at their apt. complex,
and we are becoming more and more fond of grilled veggies.

I'll have to either order from there or go looking for one. :-)
Been wanting to give more grilled veggies a shot!

A variation on your receipt is to add some soy sauce whilst cooking and then
when near to done add some toasted sesame seeds...serve over rice. Divine!

The grill wok can be found at Home Depot or similar places. If you happen to
find a flat version (sometimes called a fish grate), *PLEASE* get the
measurements and let me know! I like the idea of more grill area.

Yes. I have one of those pump-em-up sprayers that I keep full of olive oil
that works very well. Then a couple of grinds of pepper and maybe some
salt...

BOB,

I don't know if this would be of any help or interest to you, but I cut a
piece of "hardware cloth" (1/4-inch openings) the full size of my grill
surface. Before using it I brushed it with vegetable oil and fired it up
on the grill at high temp. Cooled it down, then repeated this
"seasoning" process 3-4 times. I find this works very well with numerous
small items, and I can also easily use a spatula for turning and
rearranging the food on the surface.

I'm actually considering just making one myself after cogitating over
it. ;-)

I'm crafty that way. I'll be looking at metal grating type stuff at
Lowe's. I think I can get "hole'y" steel or aluminum and just have to
make sure it is not galvanized steel. That way I can make something a
bit bigger than what would be for sale...

I'll let you know what I find.

I dunno... Sounds practical, but I rather like the challenge of creating
a bed of wood coals that are almost white-hot. ;-)

I've pretty much gone back to wood rather than charcoal as, one, my fire
lasts MUCH longer which is good for some longer term cooking projects,
and, two, wood makes a hotter fire than charcoal!

I was priveleged to land a rather large load of pecan wood for free
recently, and my own elderly mesquite tree out front sheds branches from
time to time.

This mesquite tree is nearly 3 ft. across at ground level. It is OLD!!!

We have huge mesquite trees here in the AZ desert. Unfotunately, none of
them belong to me!

Guess I ought to take pictures. ;-)

Back in the Texas Hill country, there are some very old and large
mesquites.

That is at ground level. The actual main trunk is only about 2 ft.
thick. I estimate it's hight at about 30 ft.

I'm SO glad that home builders in Texas tend to preserve the local trees
and not just randomly clear the site! :-)

I also have a cedar that is even taller, but the trunk is only about 18"
thick a few ft. up from the ground. I have to regularly prune it so it
does not touch my roof.
