It is just as easy to smoke two briskets and a pastrami as it is to do one. I have great brisket year round and don't have to freeze my ass off in the winter. You're thinking of cured meat (with nitrate, usually, or at least lots of
salt) that is often cold-smoked as well. It's the cure that preserves the meat at room temperature (although the smoke may help a bit). You're thinking of cured meat (with nitrate, usually, or at least lots of
