Why would one want to freeze something that's smoked? Properly smoked meats
should not need freezing.

We freeze smoke pork butt and it's fine. I imagine chicken legs would be
ok. Not sure about lamb or salmon, though.

We freeze smoke pork butt and it's fine. I imagine chicken legs would be
ok. Not sure about lamb or salmon, though.

He is talking about hot smoked meats, not cure smoked. Big difference.

To reply tot he OP, yes, I do it all the time. It is just as easy to smoke
two briskets and a pastrami as it is to do one. I have great brisket year
round and don't have to freeze my ass off in the winter.

A Tilia Foodsaver is great for things like this. Tastes as good as the day
it was cooked, and I'm talking even two years later.

You're thinking of cured meat (with nitrate, usually, or at least lots of
salt) that is often cold-smoked as well. It's the cure that preserves the
meat at room temperature (although the smoke may help a bit). Hot-smoked,
uncured meat is just like any cooked food.

You're thinking of cured meat (with nitrate, usually, or at least lots of

Not necessarily. Smoking as preservative needs to be a carefully
regulated process. Doing it casually at home is a very different
thing, particularly if it's merely done for flavor.

Don't chance it.

And, yes, smoked meats freeze well. Better vacuumed.
