I have a goat that I want to roast on a spit over a slow fire. Does
anyone have any experience doing this?

Yes. Dig a pit. Fire up the pit. Put the goat between a couple of metal
frames if you want to butterfly it, or on a spit if you want that. We did
both ways a couple of years ago.

That may actually be the safest way to do it.
By leaving the central nervous system intact,
you prevent leakage of cerbrospinal fluid
all over the rest of the meat, which may
reduce the chance of spreading prions
(infectious agent for transmissable spongiform
encephalopathy), should they be present.

I had pit roasted sheep a few years ago with the head on. I didn't eat
the eyes, but the sinus was yummy. It is surprising what you will eat
when overcome by the heavenly odor.

For one thing, there is meat in the head.

Many of us have the notion that animals only have loin chops and steaks.
There are lots of other meaty treats in them. Much ends up in sausage or
ground meat.

My guess is that you would not have wanted to be at the dinner the night
before. It was a game of "guess the body part".

Thank you to everyone who chimed in. I took a 25 lb goat, marinated it
24 hours in 6 bottles of wine, 3 limes a cup of olive oil, 15 cloves of
garlic and a cup of juniper berries. We stuffed its body cavity with
rosemary and roasted it over a wood fire for 5 hours, basting constantly.

It was superb. Everyone but one person who had not had goat before liked
it, and everyone but one who had had goat before said it was the best
they had ever eaten.
