Default cornmeal/breadcrumbs

Has anyone ever tried substituting cornmeal for breadcrumbs in a mixture
such as ground beef (to make hamburgers) ... with tasty or similar results?

I don't use breadcrumbs when making hamburgers. However, I suspect that
with the very short cooking time for hamburgers that the cornmeal would
remain quite gritty leaving an unpleasant texture in the burger. I do
sometimes add a small amount of cornmeal to streusel topping to add a little
texture and flavor, but it is for the opposite reason you would use bread
crumbs in a meat mixture.

No, No and No.

No, I don't add anything to make hamburger patties.
No, I have not substituted cornmeal for breadcrumbs.
No, I would not use the 2 interchangeably. The cornmeal needs (absorbs)
more water than the meat can furnish. Therefore you will end up with a
gritty mess.

I have used cornmeal on it's own and mixed with flour for frying fish. It can
get pretty gritty. I can't see using raw cornmeal with hamburger, unless your
teeth neat some extra abrasive cleaning.

If you add breadcrumbs (or something similar) you get a meat loaf, not a
hamburger (regardless of the shape). I have had good results using rice,
buckwheat, bulgur (all cooked of course), and crumbled cornbread.

Are you thinking of meatloaf? Breadcrumbs, cornflakes, leftover
corn*bread*, cooked rice, potato shreds, even cooked pasta can be
added to the meat mixture to glom things together and extend the
number of servings. They sop up some of the juice/fat and can help
make 1lb of meat into a 'meat' dish for 6 people. Cornmeal *might* be
ok -- a little masa as a thickener/binder would be better.
