Anyone have good low carb casserole type dishes?

LC doesn't lend itself well to casseroles, primarily because the
thickeners you'd use in other dishes aren't present to hold everything
together. I've tried cheese-based casseroles and they just end up oily.

That being said, you really ought to pop over to
alt.support.diet.low-carb and ask about recipes there. In addition to
what that group has to offer, a simple google search will bring up more
LC recipes than you know what to do with. Many are on websites of folks
who have been on the low-carb plan for a while, so they are
tried-and-true favorites.

I offer a different reason for problems with low carb casseroles:
Low carb veggies are low starch, so their fiber is not as densely
packed. When cooked slowly, low carb veggies tend to turn to mush.
That's why most casserole recipes tend to have more root veggies
than above ground veggies.

So it depends on your current carb level. Turnips, rutabagas,
parsnips and so on do fine but you'll need to be in the 40-50 gram
per day or more levels before they are doable.

So how about a staged cooking method? Bake the meat and liquid
slowly like a casserole with a bit of onion. Then add the low
carb veggies in the last half hour. Later than that, sprinkle
with a nice rich cheese and crumbled pork rinds for the crust.
