Anyone have good low carb casserole type dishes?

I offer a different reason for problems with low carb casseroles: Low carb veggies are low starch, so their fiber is not as densely packed. When cooked slowly, low carb veggies tend to turn to mush. That's why most casserole recipes tend to have more root veggies than above ground veggies. So it depends on your current carb level. Turnips, rutabagas, parsnips and so on do fine but you'll need to be in the 40-50 gram per day or more levels before they are doable. So how about a staged cooking method? Bake the meat and liquid slowly like a casserole with a bit of onion. Then add the low carb veggies in the last half hour.
