Help! Please. Cooking for large group for first time........ refried bean dish?
 
I was a bachelor forever and now I have committed to cooking for a
group of 30 for a surprise party.

Problem is I cook one item and one item only, super veggie-cheese
enchiladas.

I will barely be able to squeeze the 4 casserole dishes into the oven
and I need one more main filling item that wont require the use of an
oven.

So I thought that refried beans would be perfect……?

So can someone please tell me how to prepare refried beans in a crock
pot? I am hoping its as easy as buying a bunch of 16 oz refried
beans, throwing in some water, turning on the crock pot and done.
Later some melted cheese on top and its all good…..?

Can someone PLEASE give me exact instructions as I am ready to freak
as the party is on Saturday.

I just got news today that if you soak pinto beans in water and a can of
beer and let them cook in a crock pot until tender, you end up with some
fantabulous beans! (thanks Damsel, Ariane, Grey, and boli - you guys get
all the credit!) Add cheddar to them and viola!

If you're looking for refried beans consistency, just mash them.

If you start to angst about pots and pans and oven space, you could also
make a giant filling salad to go with the enchiladas...

For example I might go for 3 or 4 heads of green lettuce, make into
bite-sized shreds. Put the lettuce in a couple of those square foil roasting
pans you can get in the grocery store. On top of the lettuce pans distribute
thin slices of one sweet red onion, 1 or 2 cans rinsed kidney beans, bottled
dressing (some kind of vinagrette).

ONLY if you think the guests are adventurous, sunflower or pumpkin seeds
(SHELLED) taste yummy sprinkled in salad.

They will be great and they nuke very well:

Get several large cans of your favorite brand or refried beans and put them
in a nuke proof dish (large enough to fit your microwave).

Add a layer of diced Ortega or other green chilies then add a layer of
grated jalapeno jack cheese cover and warm. Sliced olives also look nice.

Buy a giant box of Minute rice and make the following for 24. This recipe
will serve 4 so scale all times 6. BTW you are not locked into the Tack Bell
Salsa use your favorite chunky brand. You can also eliminate the cheese.

1 can (10-1/2 oz.) condensed chicken broth (1-1/3 cups)
1 cup TACO BELL HOME ORIGINALS Thick 'N Chunky Salsa
2 cups MINUTE White Rice, uncooked
1/4 lb. (4 oz.) VELVEETA Pasteurized Prepared Cheese Product, cut up


MIX broth and salsa in medium saucepan. Bring to boil.
ADD rice and VELVEETA; stir. Cover and remove from heat. Let stand 5
minutes.
STIR until VELVEETA is melted.

Minute Rice is a great product when cooking for large groups and it holds
very well. If you want both the rice and beans can be cooked first and kept
warm in a crock pot.
