Default Finger Foods

Have to take finger foods to an event. Want to wrap flour tortilla's with
cream cheese and ??????. Something easy with simple ingredients and very
tasty. Give me some ideas......please.

Chop some green chiles (the New Mexico type, but could use jalapenos
etc) and onion into the cream cheese.


Cream cheese, finely-chopped green onion/scallion and some salt.

Cream cheese and finely-chopped smoked salmon (or other smoked fish).

Cream cheese and finely-chopped ham, turkey etc.


You don't need to limit it to cream cheese either. Tuna salad or egg
salad will work fine too, as long as the texture is fine enough to stay
put in the tortillas.

Spread the tortillas with bean dip or chile con queso and warm them up
when you get there.

Spread flour tortillas with softened cream cheese with
chopped chiles and chives or black or green olives. Slice
into rounds and serve with salsa for dipping.

Spread large flour tortillas with cream cheese. Sprinkle with taco seasoning
(the packaged kind is fine or make your own).
Sprinkle chopped green onion (green tips only), and chopped black olives
over that.

OR

On top of cream cheese put a layer of chopped black olives and thinly sliced
ham.

To make it easier to slice rounds; roll up
tortillas real tight and wrap in saran/plastic wrap. Refrigerate overnite,
then slice.

Do you make jam? If so, perhaps make an apricot-jalapeno jam and
spread it on tortillas with the cream cheese. Or even mix good quality
storebought apricot preserves with some canned chiles. It would be
unique and pretty easy.

Mix some cranberry jelly into the cream cheese. Spread on tortillas, top
with thin sliced smoked turkey and whatever else (lettuce, tomato, etc) you
like. Slice into rounds and serve.

Am I the only person who doesn't like these tortilla-wrap appetizers? To me,
they seem to be dry and just blah. Even dipped in salsa. I'd rather have
Doritos with a Velveeta dip.

Why waste good cream cheese?

Stuffed Mushrooms

3/4 - 1 pound mushrooms, stems removed and chopped
1/4 pound butter
I small onion diced
bread brumbs
8 oz. cream cheese

This isn't a correct recipe, but just guidelines.

Saute the onions in the butter and add the mushroom stems until they give up
their moisture. Remove from heat and add the cream cheese and mix well. Add
bread crumbs as needed to make a good consistency. Salt and pepper to taste.
Put into mushroom caps and bake in a 350 oven for about 20 minutes.

This is simple yet good. I prefer them to any crab-stuffed mushrooms I've ever
had.
