Default Fake Curried Chicken

I made a vat of soup last night and have boiled chicken meat to use.
My plan is to make a thin sauce (flour-based) with chicken broth and
milk, and some curry powder (pre-mixed; sue me), and serve it over rice.
Maybe with some chopped peanuts as garnish. Whaddaya think?

Sounds good. The other night I did something similar - was lazy but had
some cooked boneless chicken breasts. I had stocked up on Progresso soups
(on sale for 99 cents/can, with coupon it came down to 75 cents per can);
they have a new "low carb" flavor called "chicken cheese enchilada" (it's
fairly thin so it needed no extra broth)...cubed the chix, added some diced
onion, celery, red pepper, some spices to verve it up. Served over rice, it
was not too shabby for a "lazy night" supper...

A coupla nights before I had cooked a six pound turkey breast in my chicken
rotisserie. It came out perfect and I made a nice container of stock out of
the breastbone. Gotta have homemade stock on hand for those comfort food
autumnal soups...and I have some turkey stashed in the freezer for just such
a soup.

Premixed curry powder can be very good - it can be awful too, such watch
what you buy. I'd want to add a good quantity of sauteed onions (add the
curry powder at the end of the sauteeing - it helps bring out the flavor).
Garlic too, perhaps.

Thanks, Peter. I think I'll leave the garlic out. Onions were assumed.
:-) I won't be using an awful lot of curry, I think. I'll be using
Penzeys Sweet Curry.

That's not fake curry. Curry sauce has no flour in it. That's gravy with a
curry twist. Might not be bad, though. But, rather than flour, why not use
some yogurt to thicken it? That would go more towards making it curryish...

The Penzey's Sweet Cury powder, as well as Spice Islands Curry Powder,
are my two favorite commercial curry products.

This probably comed too late but maybe, and I'm guessing, an amount
equal to the chicken broth. Personally, I might use the whole can of
coconut milk. And then if there is sauce left over, I'd just freeze it
in a zip lock bag.

Too late, Sam. But worth remembering, and I thank you, if I do it again
in 20 years or so. Do you use any milk at all in the sauce? Poor Rob
-- he's even less fond of curry than I'd remembered. He choked it down
-- I've never seen an adult chew a mouthful for that long. :-) Oh,

Leave out the rice, make the sauce even thinner and it's mullgatawny soup.

Despite what others have said here, many Indian dishes have flour in them.
It's sometimes used to bind yoghurt to stop it curdling while cooking.
