You mean stuffed with cheese, battered, and fried? In Mexico, you also find
roasted poblano chiles stuffed with just about anything (salt cod during
Lent is one of my favorites) and just served with a sauce.

use whatever chili that you can stuff

poblano and anahime ( something like that)

roast them

after roasting make a small slit in the back

water will come out which is relesed by the roasting

stuff with mexican roasting chees--mozzarella is alo good

gently fry them

cover with whatever salsa you like and enjoy
that's how i do it

coat them with egg and use whatever batter you want and fry

keep it simple!!
