Hi all,
I just posted my recipe for Grittibanz which I am planning to make this year as gifts. I have always accompanied it by a batch of my Pear Honey. However I seem to have lost the recipe. I have searched high and low at home and can't find it. I know it must be there somewhere but is probably misfiled (I have hundreds of recipe cards in 4 large file boxes!) or stuck in one of my 100 or so cookbooks. My aunt thought I had given her a copy but couldn't find it. I have e-mailed by sister to see if I gave it to her and she still has it. I went online and tried to find it. I found about 10,000 recipes called Pear Honey. And about 9,998 of them have pineapple or pineapple juice in them. Mine does not!!! The other 2 were not the same recipe. I'm going nuts here. I love that stuff. Everyone else loves it. So, does anyone out there, by any chance, happen to have this recipe? It is just pears, sugar, honey (I think), and maybe a pinch of cinnamon or lemon juice. I haven't made it for at least 5 years and my memory is getting cloudy. But it sure as hell does not have pineapple in it! I got this recipe from, I think, Bon Appetit over 20 years ago, maybe as much as 30 years ago. Please help! (12 c.) sugar 3 pt. water 6 pears 2 apples Mix water and sugar. Bring to a boil and boil for 10 minutes. Grate the pears and apples and add to the syrup. Boil 30 minutes. Put in canning jars and process. # 2 8 c. ripe pears (peeled & chopped) 5 c. sugar 1 lemon, juice & rind Put all ingredients into large, heavy pot. Bring slowly to a boil and simmer, until thick, about 45 minutes. Stir frequently to avoid burning. Pour boiling mixture into jars. Leave 1/2" headroom. Process in boiling water bath 20 minutes. Makes 1 quart. #3 8 c. pears, chopped 1 tsp. ground ginger 1 lemon 5 c. sugar Wash, pare, core, finely chop and measure pears. Add lemon (sliced), sugar, ginger and 1/2 cup water to pears. Boil until thick. Pour boiling hot into jars and seal at once. # 4 6 pears 2 apples 1 orange 1 1/2 lb. sugar Orange rind, grated Pare apples and pears. Remove seeds. Peel orange. Remove seeds. Grind pears, apples and orange. Add sugar and cook 20 minutes, stirring frequently. Add grated orange rind. Cook until thick. Dimitri |

Place chopped pears into a large pot, and pour pineapple juice over them to prevent them from browning. Stir in sugar, and bring to a boil over medium-high heat. Stir frequently to prevent scorching. When the pears are at a full boil, reduce heat to medium, and cook until the mixture is the color and texture of honey. The longer you cook it, the thicker it gets. Peel or not. Core them. Blend them smooth. Add 2/3 - 3/4 cup sugar for each cup of pear pulp. Cook slowly in a heavy-bottom kettle until thickened a bit, remembering that it will thicken more when it's cold. No honey involved; the name comes from the consistency of the finished product. Are you going to can it? Although mine had 1 or 2 small amounts of something else. I'll try this one. I'm not fond of pears and the fruit honeys are, by their nature (all that sugar to get get the honey-like consistency) are sweet. It's thicker than fruit syrup.
