We've kind of developed a tradition of making potato pancakes out of the leftover mashed potatoes after a holiday dinner. I used to make homemade hash, but my family doesn't appreciate it as much as I do, so I started making these, which they love. This time, I added some of the ham from dinner, too. They vanished in a heartbeat. (I just add some eggs and flour to the mashed potatoes and mix it all up, dredge scoops of it in seasoned flour, and fry in oil.)
