Default Not An Egg To Stand On

I was gonna make aa coffee cake a few nights ago from some muffin mix
when I found out that I only had one egg when the box called for two--
so I waited until I could get another carton of eggs, but I wonder if
I could have gotten by with only the *one* egg after all? Would three
eggs make it any better? :-)

With muffin mix you could leave the eggs out altogether... add a
couple three ounces more water, or applesauce. Which muffin mix...
you could add fruit (raisins), nuts, chocolate chips.

Yeah... What's that muffin mix? Crusteze or something like that?
Anyway, that mix uses a lot of water instead of eggs and all of their
muffins taste awfully
bland-- to put it kindly. If it's that way in the other brands, I'd
rather wait until the next day and get a few eggs... ;-)
