That is what we always have the day after a ham dinner. Only we always use
farfalle and diced peppers. celery, and onions instead of the peas. Topped
with grated parmesan.

It's delicious chopped into a very cheesy macaroni and cheese.

Chef's salad? Pizza? Cajun red beans and rice?

Flatten out some artisan/ or French breadtype dough, spread small
chunks of ham all over, roll it up and bend into a circle. Bake.
Mmmmm.

While I certainly love the beanpot with ham, we also like slices or chunks
of ham in scalloped potatoes. Just add the ham to the layers of potato
and bake. A salad and it is a real comfort food meal. Also do like the mac
and cheese with ham.

Ham And Cheese In Puff Pastry

Ingredients
Four 5 x 5-inch puff pastry squares
2 Tablespoons finely chopped onion
1 Tablespoon butter
1 egg, beaten
1 cup shredded Swiss cheese or 3-cheese mix (Swiss, Monterey Jack
and Cheddar)
2/3 cup cooked ham, coarsely chopped
1 Tablespoon snipped fresh parsley
1 teaspoon dried dillweed or 1 tablespoon snipped fresh dillweed
Dash garlic powder
Dash fresh ground pepper
1 egg yolk with 2 Tablespoons water mixed for egg wash

Preheat oven to 400 to 425 degrees. If using frozen pastry puff, let
pastry come to room temperature.

In small saucepan, cook onion in butter until tender but not browned.
For filling, in a medium mixing bowl combine egg, cheese, ham,
parsley, dillweed, garlic powder, and pepper. Stir in onion mixture;
set aside.

Place 2 to 3 Tablespoons of the filling just off center on each
square. Moisten edges of pastry with water; fold in half diagonally.
Seal edges by pressing with finger or tines of a fork. Place pastry on
ungreased baking sheet. Coat with egg wash. Place in preheated oven
and immediately drop temperature to 380 degrees and cook 20 to 25
minutes until nicely browned.

I love making Navy Bean soup with Christmas ham. I make it simple--just

I chopped it finely and added it to our Christmas breakfast potato
pancakes (mashed potato, egg, flour, ham; fry in oil). It was really
good. Otherwise, it was mostly ham sandwiches or just leftover ham and
potatoes just the way we ate them on Christmas Eve.

OKAY, this looks like a real keeper. I have printed it off for future use.
Unfortunately we went to relatives this year, and no left over. We will
have a ham for our new years eve dinner.

I posted a few ideas in the "Ham... Olé!" thread a few days ago.

Ham is quite versatile. At breakfast it be served alongside eggs, pancakes,
French toast, or waffles, or it can go into strata, omelet, or scrambles.

Ham with béchamel and peas over toast or spoonbread makes a nice lunch. A
grilled ham-and-cheese sandwich can be varied almost endlessly. Ham can add
a nice flavor to gumbo. It can go into quiches or casseroles. It can go into
banh mie, Monte Cristo sandwiches, croque madame/monsieur sandwiches, or
medianoches. It can go into macaroni & cheese, chef's salads, pasta salads,
or frisee salads with poached eggs and vinaigrette. It matches well with
cabbage, cauliflower, broccoli, Brussels sprouts, potatoes, sweet potatoes,
collard greens, mustard greens, artichokes, and many other vegetables. (Last
week I threw together ham, sweet potatoes, butter, and curry powder as a
quick snack. Garam masala in place of the curry powder would have worked as
well.)

Ham goes well with fruit. In the first meal from our "Christmas" ham, Lin
made a cherry-prune sauce for the ham, but ham also goes well with oranges,
pineapple, peaches, and figs.

Ham goes well with corn; you can put it into tamales, into cornbread, or
into a corn salad. You can serve it with grits, especially with cheesy
grits.

Ham goes well with green or yellow chiles, though IMO it's not as good with
red chiles. You could stuff green or yellow bell peppers with a mixture of
ham, cooked rice, and cheese, then bake until the cheese is melted. (I
really liked the guero chile thing I did with ham the other day, the one I
posted in the "Ham... Olé!" thread.)

Ham can go on top of pizza, though I don't care for the so-called "Hawaiian"
pizza.

Besides the ham, what other foodstuffs are in your house?

Our soup comes after we tire of sandwiches. I love the above with just a few
finely chopped sweet onions.

I have a 17 year old I can send over. He meanders into the kitchen during
clean up after Christmas dinner and says 'any ham left?'.....I show him
where I put the generous amount of ham in the fridge. I go to retrieve it
the next morning, and THERE IS NO HAM. So, if you have an excess ham
issue.....do I have an answer for you.

I hope it turns out for you. I've also used thick sliced deli ham
that I cubed up and it was very good. You can also add other veggies.
I like the addition of broccoli. The basic recipe is also a
foundation for a pot pie. Use your imagination and you'll have fun.

I see you mentioned cornbread later in your post. I grew up with ham
and eggs with a big slice of cornbread loaded with butter and syrup.
I still make it. Good breakfast food for us northerners who like
sweet cornbread.

More years ago than I like to remember, my son asked if he could make a
sandwich from a leftover ham. I told him to make one for me, too. He
brought me two slices of rye bread, and between them was about a 3/4" thick
slice of yummy ham slathered in mustard It's been that way since

You got me with the Swiss cheese. I love the taste of ham and Swiss cheese
together. My ham sandwich will always have Swiss cheese and a spicy
mustard.

Ham and swiss is good stuff together. I had the combo on some
pumpernickel rolls for lunch today with nothing more than mayo.
Usually I only have rye around so this was a treat.
