Default More menu suggestions needed...


I'm planning the menu for my upcoming birthday Geezerfest in January.
This will be a buffet type service so I can handle a larger group and
perhaps even have time to sit down myself. It's a largely BBQ theme
(hence the crosspost), and I'm planning to have much of the menu items
done the previous day with the BBQ items coming off the smoker a couple
hours before party time.

WOW! That sounds like a feast, Pete, but I hope you will have
some (lots!) of help putting it all together. (Do you really
need chili with all the other meat available?) Popovers for a
crowd sound like a pain to make and keep fresh. I'd provide
crusty rolls instead.

Beer? A keg depending on how many people you expect?
Green salad?

I'd try to work in some fruit, like pineapple chunks on toothpicks,
for those who aren't into a lot of heavy eating.

Maybe just a big mixed fruit salad?

I'd cut the mac or the potato salad. Looks like you're putting
yourself up for exhaustion. How about some baked beans? Cold broccoli
salad?

No help at all, which is the norm. I'll just be cooking everything
myself.

My chili is based on my BBQ brisket, so it will only take a little time
to make once the brisket is done.

The popovers are my secret weapon to keep folks out of my way while I'm
putting out the buffet - I will hand my guests the popover batter, pan
and point them at the oven I've done this before and it works well.

I expect 8-12 total, so no keg, just an assortment of beverages in a
cooler of ice. I'll probably have a basic green salad as well.

I forgot to mention, at least two of my guests are allergic to seafood,
so unfortunately I'll be leaving those goodies off the menu.

I left general beverages off the list, that will be an assortment of
stuff in a cooler of ice, I can do some sweet tea as well. I added beans
to the list.

I'm not known for simple menus, and this won't be either, however much
of it is stuff I can make a day in advance. Quantity will be more than
enough for the 8-12 I expect. Quality is always top notch since I'm
cooking.

Just put it in the appetizer section. It's very little extra work since
I use BBQ brisket for my chili.

Yeah, and the chili too probably, so you don't have to deal with bowls
and plates. And lose either the potato or pasta salad.

I may drop the pasta salad as redundant, but I'm not dropping the chili.
The chili will be in the appetizer grouping and is a minimal amount of
work to make since I use the BBQ brisket for it. I can have the chili
base made ahead and when the brisket is done all I have to do is slice a
suitable amount for the chili, add it to the base and heat it.

I don't think you *need* to make any changes. That being said, if it were my
shindig, I'd probably offer something in place of the banana creme brulee.
It's one of those things which requires individual last-minute attention to
be its best. I personally am fond of the old-fashioned banana pudding with
vanilla wafers and meringue, but I appear to be in the minority there. A
trifle of some kind is also always a big hit.

Regarding other people's concerns about the chili, you can serve Scoops
(either Tostitos or Fritos), you can make cones or bowls out of tortillas or
masa, or you can serve the chili in small paper cups. Any of those will
allow you to eat chili neatly while standing up.

It *is* an excessive amount of food for ten people, though; I hope you have
lots of take-home containers and refrigerator space!

It's not that it's a lot of food, he doesn't give quantities... but it
sure is a dumber than dirt menu... seven (count em) different fatty
meat dishes, a lotta starches and fatty/sugary desserts, and not much
else... not even a cold beverage to wash that slop down... geezers
don't eat that shit... they'd have a coronary.
